What is Russian cheese?
You can use any type of hard cheese with this recipe. If you want authentic Russian cheese, according to my friend, the closest we have here in the US is Gouda cheese or possibly Havarti cheese.
If you have an ethnic market in your area, I’ve been told that this works well with Golandsky cheese. This is a favorite of the Russian people and means Dutch in Russian.
If you cannot find any of these varieties of cheese at the store, you can make it with mozzarella cheese. Shredded mozzarella cheese is affordable and can be found almost anywhere.

- 2 cups hard cheese (or mozzarella cheese)
- 2 apples (tart variety is preferred)
- 4 tbsp mayonnaise
- 2 hard boiled eggs
- Lemon and lime juice
Garnish with cranberries, rosemary, and lemon slices (optional). If you are a garlic fan, you can add raw garlic to the mayonnaise.

How to make Russian Cheese Salad
1. Grate cheese on a fine grater, set aside 3 tbsp. for decoration. Mix the rest of the cheese with 1.5 to 2 tbsp mayonnaise.

2. Boil the eggs, cool them, and peel them. Grate them on a fine grater, and add salt, pepper and remaining mayonnaise.
3. Peel the apples, and remove the seeds and membranes.

4. Grate the apples on a fine grater, and add the juice of the lime and lemon. Mix.

5. Squeeze the apple mixture from the excess juice and put it in a dish to serve (use a clear bowl to see how pretty the layers are). Add the mayonnaise, spreading it over the surface.
6. Place the egg layer. Top with the cheese mixture. Lightly press the layers. Sprinkle the salad with grated cheese.
Decorate the salad with lemon slices, berries, and rosemary, and serve.
