directions

  • The key here is patience, add all ingredients gradually!
  • Melt butter in sauce pan on stove top with medium heat.
  • Gradually whisk in flour.
  • This will create a yellow paste.
  • Gradually add milk, whisking until incorporated and no lumps are present.
  • Continue to whisk until hot.
  • Usually 3-5 minutes.
  • The longer you cook the base (without the cheese) the thicker the sauce will be.
  • Add parmesan slowly, again whisking until incorporated.
  • Add crushed garlic and pepper.
  • Cook for 2 minutes or until cheese is melted.
  • Remove from heat.

  1. Absolutely marvellous! Like Dorothy, I've stayed away from Alfredo sauces because they're usually so heavy. I used this recipe as a side with a German Pasta dish, and it was great! The only problem I had was: Since I'd scaled it down to 1 serving (there's always a limit to how much you can scale a recipe!) and was probably too "patient" while cooking, the sauce turned out a bit too thick and I had to "loosen" it up a bit with some extra milk. But I'm definitely going to try this one again... it's a sure winner!

  2. This is good !! Love Alfredo but it is usually so heavy in calories. I put it over linguine and added some chopped black olives on top, also sprinkled some more parmesan on top. Used 2% milk, didn't have 1%. A very good supper,thank-you Jellybean, it will be a repeat!!Dorothy

  3. I lost my low fat Alfredo recipe and was glad to have seen this one! Sooo much better than mine! This recipe doubled very easily. You can't tell at all that it's low fat! Unbelievable! The only thing it needed was salt. I served this over chicken and Penne with spinach.

  4. this tasted great and definitely does not taste low fat!! Its a good, quick recipe and would be great on zucchini noodles if you wanted it extra healthy!!

  5. I tried this recipe for the first time. I was definitely impressed. We only drink skim milk so I used that. I especially heeded the direction to make this recipe slowly and even using skim milk it became nice and thick. Next time I try this I do want to add salt, more parmesan and more garlic. My husband loves alfredo sauce so this is a great alternative, that as many others said, did not sit in our stomachs like a lump! It only made enough for us two, so if you are serving more people, you might want to double or triple the ingredients.

Tweaks

  1. I doubled the measurements. Instead of two cups of milk, I used 1.5 cups and 1/2 chicken stock. I also added salt to taste, and 1.5 tblsp of Brie cheese. The flavor was fantastic! Could not tell it wasn't made with heavy cream. I also used lactose free milk, instead of regular milk.

  2. I loved this recipe! I did add more parmesan, garlic and I added some salt. That made it go from really yummy to spectacular! I agree with some of the other reviewers that the simplicity and ingredients make it too easy! I was purposely looking for an alfredo recipe that used milk instead of cream just so I wouldn't have to go to the store. This recipe is awesome and thank you so much for sharing it! I made bowtie pasta & grilled chicken with the alfredo on top and my picky family loved it and had no clue it was low-fat! I highly recommend this recipe! :)

  3. Added fresh sliced mushrooms, an extra clove of garlic (minced), and 1/4 cup Philadelphia cream cheese. Soooo good!

  4. I loved this recipe. I followed the advice of one of the reviewers and added some low fat cream cheese. It probably would have been fine without it but it was next to the parm in the fridge so I threw it in. I also used garlic powder instead of minced garlic to keep it as smooth as possible. I think my favorite thing about this recipe is the portion size. Alfredo is so rich that it is impossible to work through a big batch before I get sick of it. This makes 2 generous dinner portions which is perfect for dinner and one night of leftovers. Thank you so much for this recipe. You saved me a fortune on restaurant bills!

Oh! the plight of every mother, to make nutritious meals and snacks that everyone will enjoy, including herself!Because so many "low-fat" recipes are "no-flavour" turnouts, I make it a goal to reduce the amount of fat but maintain the flavour. The reward is serving it to my family, and them saying, "This is low fat?!?!?!? Wow, can we have it tomorrow?" I try to bake every week but I am rarely succesful in creating a cookie that is low fat and great tasting. So, sometimes I actually follow a recipe.
