Easy Roasted Cauliflower

I have been craving all the veggies lately. In fact, this week I plan to just grill a whole bunch of vegetables and serve them in salads or grain bowls. Not sure what’s come over me but I just can’t get enough. Although, now that I think about it, I did make Steak Burrito Bowls and BBQ Ribs this weekend. So maybe that’s why I’m over the meat for the time being.

Do you ever go through those phases?

So, since we’re on the vegetable train let’s talk vegetables. Specifically cauliflower!

Roasting Cauliflower Florets

One of my favorite ways to eat cauliflower is roasted. Something magical happens to vegetables when they get roasted in the oven. They transform into flavor bursting deliciousness, the natural sweetness comes out and really enhances taste!

Does roasting destroy the nutrients in vegetables?

Not as much as you think. Dry cooking methods such as grilling,roastingand stir-frying retain a greater amount ofnutrients for the vegetable than boiling. Steaming or eating them raw is a still the best way to retain most of the nutrients in a vegetable.

What are the health benefits of Cauliflower?

Cauliflower is very low in calories yet high in vitamins. It has high amounts of vitamin C, which acts as an antioxidants. Also, well-known for its anti-inflammatory effects that may boost immunehealthand reduce the risk of heart disease and cancer. Cauliflower is high in fiber (aiding in weight loss) and contains almost every mineral and vitamin that you need.

Now, while cauliflower does contain lots of goodness. Too much cauliflower can cause gassiness and bloating. So just be aware of portion control.

How to Roast Cauliflower Florets

  1. Preheat oven to 400 degrees F.
  2. Place cauliflower florets on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper. Toss the florets to coat. Spread out in a single layer.
  4. Bake for 30 minutes. Remove from oven when browned.
  5. Garnish with parsley and serve.

Can Roasted Cauliflower be Frozen?

Yes, it definitely can be frozen! Place the already roasted cauliflower on a baking sheet and put in the freezer for 30 minutes. Remove from the freezer and transfer the partially frozen cauliflower into a freezer safe storage bag. Place cauliflower back in the freezer, will keep for up to 3 months. This is a good option for quick heat-and-eat meals, like lunches or anything last minute. Since the cauliflower is already cooked, all you need to do is reheat it. The texture is not as perfect and crunchy as fresh, but it still tastes good!

You can reheat the cauliflower in the oven (for best results), or reheat in the microwave.

I’ve made a couple different kind of roasted cauliflower recipes over the years. But by far, this is my favorite. The parmesan cheese basically forms a shell around the florets and then turns golden brown on the baking sheet. And let me just tell you, there is nothing better than golden brown parmesan crisps fresh out of the oven. I couldn’t stop munching.

This recipe is incredibly easy to make and all made on one pan for easy clean up.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 1/2 tablespoons olive oil
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 3/4 cup grated parmesan cheese
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place cauliflower florets on a baking sheet.
  3. Drizzle with olive oil. Toss the florets to coat. Spread out in a single layer.
  4. Season with salt, smoked paprika, garlic powder and black pepper. Using your hands, toss again to coat the cauliflower. Spread out in a single layer.
  5. Sprinkle parmesan cheese over the cauliflower.
  6. Bake for 30 minutes. (no not toss the cauliflower while it’s baking, you want the cheese to brown up) Remove from oven when browned.
  7. Garnish with parsley and serve.
