Sorry it didn't turn out for you. Every microwave is going to run slightly differently if the mixture is starting to turn slightly brown then you shouldn't microwave it any longer as stated.

  2. Microwave Peanut Brittle Recipe-Butter Your Biscuit (8)J

I followed the directions exactly as written and should have stopped after the first microwaving. The second microwaving resulted in a burning of the syrup and sugar mixture and I wasted the whole batch!

Just soak in hot soapy water for a few minutes comes right off.

I'm going to try this recipe today, but my concern is cleaning the glass mixing bowl and utensils I'll be using. Won't the mixture harden on them, too? How do you clean them properly?

FAQs

Why is my microwave peanut brittle chewy? ›

Adding baking soda when making peanut brittle makes the hot sugar syrup foam, creating lots of tiny air bubbles that give the candy the porous, crispy honeycomb texture it's known for. Why didn't my peanut brittle turn out? If your peanut brittle is light in color and chewy, it was not cooked long enough.

Why is my peanut brittle not crunchy? ›

Brittle is best made on dry, low humidity day. If you make it when it is humid, the candy will attract moisture from the air, making it sticky instead of crisp. Humidity also slows the cooling process while your candy is setting, increasing the chances of having unwanted crystals form.

Does peanut brittle contain butter? ›

Butter. Use unsalted butter (since we're using salted peanuts and adding salt ourselves!) and make sure it's softened. Baking soda. I talk about this in-depth below, but essentially baking soda creates the proper texture and flavor in any good peanut brittle recipe.

Why put baking soda in peanut brittle? ›

Baking soda is a key ingredient in making homemade brittle. When you add peanut brittle to the sugary syrup, it lets out tons of air bubbles (don't worry…they are tiny!) and it is what gives the candy such a light, airy texture. Don't skip it! Without baking soda, the brittle will be hard and chewy.

Why is my peanut brittle bitter? ›

Those other liquid sugars have impurities that will burn at the higher temperature of making caramel, leading to a bitter-tasting brittle.

Why did my peanut brittle not turn brown? ›

Also, make sure to add your peanuts once the syrup reaches the soft ball stage (239°F). The nuts add proteins, which are a key component in the browning reactions that make brittle the rich caramelized brown color.

Why is peanut brittle bad for you? ›

Peanut brittle has one redeeming quality: peanuts. Outside of that single ingredient, peanut brittle is painfully unhealthy. It contains: sugar, corn syrup, and butter, all of which are unhealthy for your body in different ways.

What makes brittle hard? ›

What Makes it Brittle? The sugar will be cooked to 300ºF (149ºC)—hard crack stage; which when set up would be hard like a lollipop. But peanut brittle is delicate and you can easily bite into it—how? The secret is in the baking soda.

What makes crunchy peanut butter crunchy? ›

So, since there are no additional ingredients, what creates the little extra crunch in our crunchy peanut butter? To turn our smooth peanut butter into crunchy peanut butter, we add in chunks of real crushed peanuts to give the nut butter some extra texture.

How do you make easy peanut brittle? ›

Melt butter in a saucepan over medium heat. Stir sugar and salt with melted butter to dissolve completely. Remove saucepan from heat, add peanuts, and stir to coat completely; immediately pour onto prepared pan and spread into an even layer. Refrigerate until brittle, at least 30 minutes.

How can you tell when peanut brittle is done without a thermometer? ›

If you do NOT have a thermometer, here's what you do. Take a very small cup of cold water and drop a bit of the mixture in. If it dissolves into the water, it's not ready. Mine took 18 minutes to reach the correct temperature, so around 15 minutes start trying the water test.

How long does homemade peanut brittle last? ›

To store: Once it's completely cooled, store peanut brittle in an airtight container at room temperature. Do not refrigerate as the moisture from the fridge will cause the brittle to soften. Store for 6-8 weeks. To Freeze: Peanut brittle can be frozen and stored up to 3 months.

Can you use parchment paper when making peanut brittle? ›

You will want the cookie sheet to be non-stick. Use parchment paper, a silicone baking sheet or a greased cookie sheet. Spread the peanut brittle as thin as you can. Immediately add your sea salt.

Should you refrigerate peanut brittle? ›

Once inside the fridge, moisture can change the texture and firmness of the candy, resulting in a softer and even chewier candy that is more gummy than brittle.

Why is my peanut brittle so thick? ›

Not spreading the mixture thinly enough: If the peanut brittle is too thick (usually because you used too small of a pan), it may not cool and harden properly. Be sure to spread the mixture as thinly as possible in the pan. 4. Humidity: Humidity can affect the hardening process of the peanut brittle.

Is there a way to fix chewy peanut brittle? ›

So, I Googled Salvaging Undercooked Peanut Brittle and followed Tiffany's helpful instructions to throw the pieces back in the pan, turn the heat up and stir, stir, and stir to a raging boil and wait to pour it in the pan until it reaches 300 degrees.

Why does microwave make food chewy? ›

When one of those sugar molecules reaches 212 degrees Fahrenheit, it melts, which softens it. This is why bread can actually feel soft and fluffy when it first comes out of the microwave. But then when it cools, that molecule recrystallizes and hardens, causing the bread to become chewy and hard.

Why did my toffee turn out chewy? ›

Low and slow. Simmering the syrup for English toffee to the requisite 300°F temperature can (and should) be a slow process — up to 20 minutes or so. Don't hurry this gradual transformation; syrup that doesn't reach 300°F, or close to it, will make candy with timid flavor and chewy (not crunchy) texture.

How do you salvage soft peanut brittle? ›

I started on medium heat, but turned it down to a bit below medium. KEEP STIRRING. While it's still semi solid you MUST keep stirring or it WILL burn. I thought it was never going to turn into a liquid, but of course it did.
