Fall is a favorite time of year because cinnamon smells so good when it’s baked, which is why this Cinnamon Cookies Recipe is always a hit!

Cinnamon is such a popular spice and is used in many types of desserts because it makes them really tasty. In fact, cinnamon cookies are my favorite type of cookie!

I love to bake cinnamon cookies – especially this time of year. So warm and inviting – the family can’t wait for these cookies to even cool down before they are devouring them one by one.

What I really love about these cookies is that they are a no-chill recipe. Most of the time I don’t plan ahead – so when I get it in my mind that I want cookies – waiting for chill time ruins the plan.

Here are some commonly asked questions

What do cinnamon cookies taste like?

These cinnamon cookies are soft with a tender crumble. Not chewy but more like the texture of a shortbread of Biscoff cookie. The crushed walnuts that are mixed in give an earthy depth without having an overpowering walnut flavor.

It complements the cinnamon perfectly. They are the epitome of fall.

Can these cookies be made ahead of time?

You bet. This cookie dough can be made ahead of time and kept in the refrigerator for up to 4 days prior to baking. You may need to let it sit out at room temperature for about 20-30 minutes before rolling, cutting, and baking.

Cinnamon Cookies Recipe (4)

How many cookies does this make?

This recipe makes about 30-38 cookies but this will depend on how large or small you make them. With these large cookie cutters, it may be a few less.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to bake the cookies for the butter to soften but not get too soft.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

What other ingredients can I add to these cookies?

Some popular ingredients to add include finely chopped raisins, dried cranberries, or dates that can be folded into the dough. You can also add chocolate chips or cinnamon chips to the tops of the cookies after they have been rolled and cut but before baking.

Should I use salted or unsalted butter?

When making a traditional cut-out cookie recipe like this one where the base is butter, I like to keep the butter unsalted.

Please do not use margarine with this recipe. Real butter only.

Can I use cinnamon substitutes instead of cinnamon?

Substitutes include cardamom, cloves, ginger powder, and pumpkin spice mix. Some people even substitute apple pie spice, which contains cinnamon and nutmeg.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Tips for the best cinnamon cookies

  • use real butter – no margarine here
  • avoid over-baking as this will dry out the cookies and make them brittle
  • make sure the butter isn’t too soft – this will make the dough too soft and the cookies will spread too much when baking.
  • avoid freezing as this will allow cool, moist air to ruin the coating.
  • omit the cinnamon and sugar coating and add an icing glaze instead if desired.

Tips, Tricks, Suggestions

  • If you have a period of time where you are not actively working the dough for this easy recipe, be sure to wrap it in plastic wrap to keep it soft.
  • The cinnamon sugar mixture is similar to what you would use when making Snickerdoodle cookies and can be changed up if you want it to have more cinnamon flavor or more sugar flavor.
  • No need for a cookie scoop when making these chewy cookies.
  • Be sure to use a cool cookie sheet for your dough so the cookies don’t bake unevenly.
  • When using an electric mixer with a paddle attachment or a hand mixer, be sure to mix at a medium speed for the wet ingredients and reduce to low speed when mixing in the dry ingredients/flour mixture.
  • I like to add a little bit more of the cinnamon-sugar mixture on top of these easy cookies when they come out of the oven.
  • Try adding a little cream cheese frosting to the tops of this cinnamon cookie recipe to make them taste like cinnamon roll cookies.
  • Be sure to let the baked cookies cool on a wire rack when they are done baking.
  • If you like soft cookies, you can under-bake for 1 minute. If you like crunchy cookies, increase the baking time by 1-2 minutes.
  • These are great cookies for the holiday season and make fabulous gifts and are sure to be the favorite cookies of the season.
  • Always start with a preheated oven when making these cinnamon sugar cookies.
  • This classic cookie recipe yields a tender cookie with crisp edges, similar to chewy sugar cookies, but with a cinnamon sugar coating that is sure to fix that sweet tooth.

Can this recipe be doubled?

Yes, absolutely. These cookies are perfect for gift-giving or parties. So if you need more than 30-38 cookies – I highly recommend doubling this recipe.

What is the best way to store leftover cinnamon cookies?

Once the cookies have cooled, place them in an airtight container, and keep them at room temperature for up to 4 days. It is important for the cinnamon and sugar coating to not get moist as this will ruin the texture of the cookies.

This sounds so easy except I’m wondering if I could make balls, roll in cinnamon/sugar, and slightly flatten and bake?

Possibly – you might need to increase the baking time since they will most likely be thicker than if you had rolled and cut the dough.

FAQs

What makes cookies soft vs crispy? ›

Soft cookies have a water concentration of 6% or higher – moisture being the variable in texture. To make cookies crispy, add less liquid or bake it in the oven for longer to dry out the dough.

What makes cookies fluffy and not flat? ›

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

Why do you put cream of tartar in sugar cookies? ›

Cream of tartar makes cookies chewy, as it precludes the sugar in the dough from crystalizing, which would lead to crispiness (ie: the opposite of chewiness).

What does the word "snickerdoodle" mean? ›

1931s Joy of Cooking claims the term snickerdoodle is based off the German word Schneckennudel—a German pastry whose name literally translates as 'snail noodle'. A Schneckennudel is a yeast dough roll that more closely resembles a cinnamon bun, not a snickerdoodle cookie.

What is the secret to making cookies soft? ›

Cornstarch is a game changer for cookie baking,” confirms Brian Hart Hoffman, editor in chief of Bake from Scratch. “You can count on [it for] a softer and more tender crumb.”

How do I make my cookies chewy instead of crunchy? ›

Use Melted Butter

If the goal is a chewy cookie, then you absolutely need to be using melted butter. The technique of creaming softened butter and sugar together is often used for making cakes. And for good reason! The process of creaming incorporates air into the butter which results in a more airy and cakey cookie.

Should I use baking powder or baking soda for cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

Why do my cookies get hard after they cool? ›

Cookies become hard when the moisture in them evaporates. This can be caused by leaving them out in the air for too long, baking them for too long, or storing them improperly. The lack of moisture makes the cookies hard and dry, which makes them difficult to enjoy.

What cookie ingredient will rise and be softer? ›

Sugar: Using brown sugar, which is more acidic and hydrophilic, retains moisture during baking. This creates a softer, moister end product. When used with egg, the acidic pH of the brown sugar will help denature (solidify) the egg faster and prevent spreading.

Why use powdered sugar instead of granulated in cookies? ›

When creaming butter and sugar, granulated sugar's larger crystals incorporate more air into doughs than confectioners' sugar. A cookie made with granulated sugar will be crispy while one made with powdered sugar will be tender and melt-in-your-mouth.

What happens if you leave out cream of tartar in cookies? ›

You can also simply leave out the cream of tartar from a recipe, which may result in baked goods that are not as fluffy, but will still work out and taste good.

What is a substitute for 1 teaspoon of cream of tartar? ›

This substitution is ideal because it can be used in any recipe without modifying the taste or texture of the final product. You can use baking powder to replace cream of tartar in recipes that also contain baking soda. Substitute 1.5 teaspoons (6 grams) of baking powder for 1 teaspoon (3.5 grams) of cream of tartar.

What is a substitute for cream of tartar in snickerdoodles? ›

You can either replace cream of tartar with baking powder at a 1:1.5 ratio (1 teaspoon cream of tartar : 1 ½ teaspoons baking powder), or you can replace cream of tartar with the combination of baking soda and either lemon juice or vinegar (as with this recipe).

Why are my snickerdoodles raw? ›

If your oven runs too hot or cold, it can affect the baking time and result in undercooked cookies. Make necessary adjustments to ensure the temperature is accurate. Cookie size and placement: Consider adjusting the size and placement of your cookie dough on the baking sheet.

Why do snickerdoodles call for cream of tartar? ›

Mom would tell you the cream of tartar stabilizes the snickerdoodles, providing the light, soft, pillowy texture. It also adds the tangy note associated with snickerdoodles.

What makes a cookie soft instead of hard? ›

Soft-baked cookies are often made using a solid fat with a higher melting point, which prevents the cookie from spreading while baking. The result is a thicker, softer, chewier cookie. Another simple trick for softer cookies is to use chilled dough.

What causes a cookie to be too crispy? ›

Flour adds fluff and texture to the cookies. Adding too little flour can cause cookies to be flat, greasy, and crispy. Most recipes assume you'll use all-purpose, but if you want a lighter, crumblier cookie texture, choose one with a lower protein content such as cake-and-pastry flour.

What ingredient contributes most to the texture of a crisp cookie? ›

Fat is a very important ingredient in cookies – it tenderizes, crisps and browns, adds color and a wonderful flavor that is impossible to duplicate. Butter, our fat of choice, ensures good baking results and adds the most desirable taste, texture and appearance.

How to retain the crispiness of cookies? ›

Keep those cookies crisp by storing them in an airtight container. Some people toss a piece of bread in with the cookies to help absorb any excess moisture. You could also re-crisp them by baking on a wire rack in a 300 degree F oven for a few minutes.
